Taste is a personal thing. Some people believe that the robust, bitter coffee foundation of Dalgona instant coffee creates the ideal canvas for sugar and milk. How could anyone detest something they worked so hard on? However, you have to understand that this is not a drink for the faint hearted.
How is dalgona coffee prepared?
Dalgona Coffee is prepared by mixing or whipping instant coffee with equal parts of sugar and water (2 tablespoons of each is a fair quantity). Using a whisk or hand mixer, whisk or whip together the water, coffee, and sugar for 5-10 minutes, or until the mixture produces a thick, foamy froth, then pour in a layer over ice and evaporated milk. The drink will have a wonderful creamy head and will mingle with the milk as it is consumed.

What is instant coffee?
Instant coffee, also known as soluble coffee, coffee crystals, coffee powder, or powdered coffee, is a brewed coffee beverage that allows consumers to make hot coffee fast by swirling hot water or milk into the powder or crystals. Instant coffee is made in a commercial setting by freeze-drying or spray-drying it, then rehydrating it. Instant coffee is also available in a concentrated liquid form.
Instructions on how to make your dalgona coffee.
In a bowl, mix the instant coffee, sugar, and boiling water (you can easily double or triple this recipe; depending on the quantity of dalgona coffee you want). Whip on high speed with a hand mixer or stand mixer. Using an electric mixer, whip the entire mixture for about 2 minutes. Scrape the sides and whip any pieces that have not been whipped.
Taste (it will be extremely strong; however, it will be diluted with milk) and add additional sugar if required. Some people add extra tablespoon of sugar, but it is not really necessary. Keep in mind that it will be diluted with milk!
In summary;
Place the coffee, sugar and boiling water in a small bowl and beat with an electric mixer until whipped into a thick and creamy mousse.
Pour the evaporated milk into 2 coffee cups or glasses and top up with water, stir gently and then top with the coffee mousse.

Can you make your dalgona coffee without sugar?
You certainly can…BUT! While it fluffs up in the same amount of time as the sugar version, it does not stay fluffy for long as the one made with sugar. It stays fluffy for approximately 2 minutes before gently dissolving for another 5 minutes till it is liquid again. So keep that in mind if you are making the plain version (without sugar).
Granulated sugar should be used. White sugar, brown sugar, raw sugar, and coconut sugar are all options to make dalgona coffee.
